Dr. Sammy Masri, NJ Top Doc, is a board certified primary care sports medicine physician. He specializes in the diagnosis and treatment of non-surgical sports and other musculoskeletal injuries for both adults and children, for the elite athlete and for the people who participate in recreational athletics and use exercise to stay healthy and active. August Healthy Recipe: Lemon Ricotta Pancakes! Ingredients 2 tablespoons lemon juice 1 tablespoon cornstarch 2 cups frozen blueberries 3 tablespoons white sugar 1 cup ricotta cheese 2/3 cup milk 2 eggs 3 tablespoons white sugar 1 lemon, juiced and zested 1/2 teaspoon ground nutmeg 1/4 teaspoon salt 1 cup all-purpose flour 1 tablespoon baking powder Directions Mix 2 tablespoons lemon juice and cornstarch together in a bowl until cornstarch dissolves. Stir blueberries and tablespoons sugar in a saucepan over medium-high heat. Bring to a boil; reduce heat to low an simmer for 5 minutes. Pour cornstarch mixture into blueberry mixture; cook and stir until mixture thickens slightly. Cover saucepan and remove from heat. Whisk ricotta cheese, milk, eggs, sugar, juice from 1 lemon, lemon zest, nutmeg, and salt together in a bowl until well blended. Add flour and baking powder; whisk to combine. Heat a light oiled griddle or skillet over medium-high heat. Drop batter in a 1/4 cup portions onto the griddle and cook until bubbles form and the edges are dry. Flip and cook until browned on the other side. Repeat with remaining batter. Top pancakes with blueberry sauce.
Smallpox was the first disease in which a successful vaccine was produced for its treatment. Created by British physician Edward Jenner in 1796, the disease had proved to be a very contagious and deadly disease, causing the deaths of 20-60% of infected adults and over 80% of infected children. NJ Top Docs Presents July 2016 Healthy Recipe: Grilled Peaches Ingredients: 1 stick unsalted butter, at room temperature 1 teaspoon cinnamon sugar 2 tablespoons granulated sugar pinch salt 4 ripe peaches, halved and pitted canola oil mint leaves, for garnish Directions: In a small bowl add the butter and stir until smooth. Add the cinnamon sugar, granulated sugar and salt and mix until combined. Heat grill to high. Brush peaches with oil and grill until golden brown and just cooked through. Top each with a few teaspoons of the butter and garnish with mint leaves.
